Yeast Water – to make an easy sourdough bread!

Finally! Im so happy I finally tried making yeast water as I’ve been wanting to make it for a looooong time now!

In case you are wondering, what is yeast water?

It is just mixing water with fruit, that has been left to sit in a warm environment to ferment. The goal is to be able to reproduce the natural yeasts that already live on the fruit to be able to use it to make a sourdough starter.

This will be Day 1 – follow instructions below!

Will the yeast water replace yeast to make bread?

Yes!! It will replace commercial yeast or a sourdough starter (natural yeast), as you will be using the yeast water to leaven bread. Isn’t it exciting!?


Is yeast water a simpler way to making a sourdough starter?

Yes! as you reproduce the yeasts from the fruit – we will then mix that water with flour to create a sourdough starter. This, will make your bread rise just like a regular sourdough starter.


What fruits can I use to make it?

I tried this experiment with oranges and blueberries and both work. The most traditional way of doing it though is using high sugar content fruits like: apples, grapes, dates.

Can I feed the yeast water with flour and continue it like a normal sourdough starter?

Yes! once you’ve reached Day 5 and you have mixed your fermented water with flour it will start rising. You can use it to make bread and any leftover you can keep as a mother starter, and feed it whenever you need to use it.

Just like your regular sourdough starter!

Could I use the yeast water before Day 6?

I wouldn’t recommend using it before Day 6 as you need to let some days pass to be able to reproduce the wild yeasts.

Why do I need to use ph strips to make yeast water?

You don’t necessarily have to, but it is recommended because we need the water to show signs of having been fermented. That is clearly shown if the ph of the water is low, plus it means that its safe to use!

We don’t want to get stomack sick with this experimento 😉

Equipment

  • Large glass jar with a lid
  • Digital Scale
  • Spoon
  • Cup measures
  • Ph strips

Ingredients
  

  • 1 Cup Fruit I used blueberries & oranges, but you can use any fruit high in sugars like: grapes, dates, apples.
  • 2 Lbs Water Tap water is fine
  • 1 Lb Whole wheat/all purpose/bread flour from Any brand that is not bleached or bromate like King Arthur Flour.

Instructions
 

Creating Yeast Water

  • In your jar mix the fruit with the water, cover and let sit for 24 hours
  • On day 2, stir thoroughly twice a day
  • On days 3, 4, 5 repeat the same procedure. You should see bubbles and the fruit should float.
  • On day 6 using your ph strips measure the ph. You should have an acidic ph to make sure the water is safe to use.

Creating a Sourdough Starter with your Yeast Water

  • On day 6 after your water has tested an acidic ph – mix 200 grams of yeast water with 200 grams of flour
  • On day 7, if its doubled you can use it to mix your first sourdough bread! Follow the instructions of my no knead sourdough bread recipe. Link Below!
  • After you mix your first dough, make sure to save 100 grams from Day 7 and feed it according to the maintenance feedings shown on my no knead sourdough bread recipe. Link Below!
